Yoga Diet: 3 x 10 minute one pot & vegan recipe

I love simple and fast one pot recipes that are still very healthy with a lot of fresh and natural ingredients. When I’m working till late I don’t want to spend too much time in the kitchen, but I always want to eat healthy, home cooked, organic and Sattvic food that fits the Yoga Diet. This way I managed to create a whole new light, fast & healthy cooking style. Important is to prepare all your food with inner peace, never in a hurry (energy is food, food is energy, so your own energy enters the food while preparing it). That is difficult when you have little time on your hands, therefor I would like to share some great 10 minute vegan dishes with you.

Vegan bowl with spicey couscous-upma. Stir fry in coconut oil musterd seeds and cumin seeds, a chopped pepper and ginger. Add veggies, curry and salt. Fry. Add water, coriander and ghee. Boil. Add whole wheat organic couscous. Add salt and agave syrop. Let simmer slowly. Serve with raw food like cucumber and avocado. Nice with peanut or tahini sauce.
One pot vegan pasta with soy cream and spinach. First prepare the whole wheat pasta, when almost done you add pieces of courgette to the water. Boil for one minute more (safe the prana) and then drain the water. Add on a low fire some plant based cream, salt, chili flakes and basil. Stir. When heated add a lot of fresh spinach. Stir. Serve.
Again a vegan dish, would be good to serve in a bowl as well. Fry sweat potato in a little bit of coconut oil. Make a sauce of tahini, peanut butter, apple cider vinegar, agave syrup and a pinch of salt. Serve with cucumber, avocado and fresh coriander.
